Blueberry Smoothie
Mornings in my house are a whirlwind. Between getting the kids ready and finding my keys for the third time, I need a breakfast that comes together in minutes and actually keeps me full until lunch.
That is why this blueberry smoothie has become my ride, or die. It is thick, creamy, and absolutely loaded with fiber, antioxidants, and healthy fats.
I have been making a version of this almost every day for over a year now, and honestly, it tastes like a treat while doing so much good for my body.
This recipe was originally inspired by a wonderful post over at Organize Yourself Skinny, and I have tweaked it just a tiny bit to fit my family’s taste.

- A tall tumbler or mason jar for serving makes it feel a little more special, even on a rushed morning.
- A reusable straw and a little straw cleaner because thick smoothies and paper straws do not mix.
- An insulated cup keeps it cold when you have to run errands right after breakfast.
- Reusable freezer bags if you want to prep smoothie packs ahead of time.
How to Make a Blueberry Smoothie
This could not be simpler. First, add the solid ingredients to the blender: the frozen blueberries, the chopped apple, the banana, the chia seeds, the cinnamon, and the spinach if you are using it. Then pour the coconut milk right on top.
Placing the liquid last helps everything blend more evenly without the motor struggling. Pop the lid on and blend on high until the mixture is completely smooth, usually about 30 to 45 seconds.

If the smoothie looks a little too thick for your liking, stop and add a splash of filtered water, then blend again. Keep adding tiny amounts of water until you reach the consistency you love.
Pour it into your cup and enjoy immediately while it is still cold and frosty.
Storage
If you have leftover smoothie, store it in an airtight container in the fridge for up to one day. The color may darken a bit and the texture might thicken slightly, but it will still taste wonderful. Just give it a good shake before drinking.
For longer storage, I love to make freezer packs. Add the blueberries, chopped apple, banana, chia seeds, and spinach to a reusable bag and pop it in the freezer. When you are ready for your smoothie, empty the bag into the blender, add the coconut milk and cinnamon, and blend. No need to measure anything that morning.

- Make it green. Toss in a handful of spinach, kale, or even romaine lettuce. The blueberries and cinnamon hide the color and taste completely.
- Boost the protein. Add a scoop of your favorite protein powder, collagen powder, a spoonful of Greek yogurt, or a drizzle of almond butter. This makes the smoothie even more filling.
