Roasted Butternut Squash Soup with Coconut Milk (Vegan)

This is the kind of soup that makes you close your eyes after the first spoonful. One whole butternut squash goes onto a single tray with red onion, a bell pepper, carrots, two full heads of garlic and a handful of cherry tomatoes.

Everything roasts until soft, sweet and caramelized at the edges. Then it all gets blended with vegetable broth until completely silky, and a splash of canned full fat coconut milk is stirred in at the end for creaminess without dairy.

The result is naturally sweet from roasting, rich without cream, and finished with a swirl of chili oil that looks as good as it tastes. It is vegan, dairy free and gluten free, and it feeds six hungry people.

This roasted butternut squash soup with coconut milk is an improved take on a classic that keeps getting requested every fall, and once you try it you will understand why.

Why This Recipe Works

There is no long simmering pot to babysit and no saute pan full of onions to stir. Everything goes onto one tray and the oven does the heavy lifting. Roasting builds the deep, sweet flavor that makes this soup taste like more than the sum of its parts. Here is why the method is so reliable.

  • One tray, zero sauteing. All the vegetables roast together with no pot stirring required. You season the tray, walk away, and come back to caramelized vegetables ready for the blender.
  • Two whole heads of garlic. That sounds like a lot, and it is, but roasted garlic turns soft, sweet and buttery. The cloves squeeze right out of their papers and melt into the soup with none of the sharpness raw garlic would bring.
  • Built in balance. Roasted bell pepper and burst cherry tomatoes add acidity and a savory edge. Without them the soup could taste flat or one note sweet. With them, every spoonful stays interesting.
  • Creaminess without dairy. Full fat canned coconut milk gives the soup body and richness. The roasted vegetables are so bold that you will not taste coconut at all, just a smooth, rounded finish.
  • Silky with any blender. Because the vegetables roast until completely soft, even an ordinary blender gives you a smooth result. No straining, no lumps, no fuss.

What You Need (and What to Swap)

The ingredient list looks long, but most of it is pantry seasoning. Think of it in three groups: what goes on the roasting tray, what finishes the soup, and what goes on top.

For roasting:

  • 1 medium butternut squash, about 2 and 1/2 lb (1.1 kg), halved lengthwise and seeded
  • 1 red onion, halved
  • 1 red bell pepper
  • 2 carrots, peeled
  • 2 heads garlic, tops sliced off
  • 2 cups cherry tomatoes
  • 3 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp chili flakes, optional

For the soup:

  • 1 and 1/2 cups vegetable broth, plus up to 1/2 cup more to thin
  • 3/4 cup canned full fat coconut milk, plus more to drizzle
  • 1 tsp grated fresh ginger, optional

To serve:

  • Chili oil or chili crisp
  • Chopped fresh parsley or cilantro
  • Toasted sourdough

A few smart choices make the difference. Score the squash in a deep crosshatch so the seasoning reaches the flesh. Tuck the onion halves cut side down into the squash cavities so they steam and caramelize right alongside it.

Use one head of garlic instead of two if you prefer a milder garlic flavor. And reach for canned full fat coconut milk, shaken before opening. Carton coconut milk is too thin and will not make the soup creamy.

Start with the smaller amount of broth because this soup is thick by design, and you can always thin it later.

Tips for the Creamiest Roasted Butternut Squash Soup

These are the small things that separate a nice soup from a great one. None of them are complicated. They just need a little attention.

  • Roast hot and scored. Place the squash cut side up with a deep crosshatch scored into the flesh, and roast at 425 F for 50 to 60 minutes. It is done when a knife slides into the thickest part with no resistance. Peeled, cubed or store bought precut squash roasts faster, in 30 to 35 minutes.
  • Do not skip the salt. Season the tray generously, then taste and adjust at the end. Salt is the difference between sweet and flat versus sweet and deeply savory.
  • Watch the garlic. The heads need to be golden and soft all the way through. Cloves that are not fully roasted will taste sharp in the finished soup. Give them a few extra minutes alone, or wrap the heads loosely in foil from the start.
  • Blend hot soup safely. Fill the blender no more than two thirds, remove the center cap from the lid, cover the opening with a folded towel, and start on low. An immersion blender works in the pot too, though it takes about a minute longer to get fully smooth.
  • Start thick. Use the smaller broth amount first. This soup is intentionally thick and luxurious. It is easy to thin with extra broth, but once it is thin you cannot go back.

The fastest path to creamy: roast until the vegetables are completely soft, blend longer than you think you need to, and add the coconut milk off the highest heat so it stays silky.

Swaps and Variations

This soup is flexible, which makes it a great weeknight regular. Use these tested swaps without changing the method.

  • No coconut milk. Use 1/2 cup cashew cream, a splash of oat milk, or nothing at all. Roasted squash is creamy on its own, so the soup still works.
  • Nightshade free. Skip the bell pepper and tomatoes and add a second carrot plus a small apple to the tray. The apple adds gentle sweetness that replaces the tomato brightness.
  • Add protein. Blend in a can of drained white beans, or simmer 1/2 cup red lentils in the broth for 15 minutes before blending. Both disappear into the soup while making it more filling.
  • Change the squash. Kabocha, honeynut or sweet potato at the same weight all work. Sweet potato makes the soup noticeably sweeter, so you may want an extra squeeze of lime.
  • Curried version. Stir in 1 tablespoon red curry paste with the coconut milk and finish with a squeeze of lime. It is a completely different dinner from the same tray.
  • More heat. Add chili flakes to the tray before roasting and finish with extra chili oil on top. The warmth blooms beautifully against the sweet squash.

What To Serve With Butternut Squash Soup

A bowl of this soup is a full meal, but the right company makes it even better. The classic move is a vegan grilled cheese on sourdough for dunking. The crispy, melty sandwich against the silky soup is hard to beat. If you want something simpler, toasted sourdough with olive oil does the job happily.

It also works as a starter before pasta, or alongside a sharp green salad whose brightness cuts the richness. Some readers thin the soup slightly and use it as a sauce over pasta or tortellini, which is genuinely delicious and worth trying with leftovers.

Favorite toppings:

  • A swirl of chili oil for color and gentle heat
  • A drizzle of coconut milk for contrast
  • Chopped parsley or cilantro for freshness
  • Toasted pumpkin seeds for crunch

Storing Roasted Butternut Squash Soup

This soup is one of those rare recipes that gets better the next day, so leftovers are a gift. Refrigerate it in an airtight container for up to 4 days.

It thickens as it sits, so loosen it with a splash of broth or water when reheating on the stove over medium heat, or in the microwave in short bursts with stirring between them.

It also freezes well in portions for up to 3 months. Thaw overnight in the fridge, and whisk while reheating since the coconut milk can look a little separated at first. Add the chili oil and fresh herbs after reheating, not before freezing, so the toppings stay bright and fresh.

FAQs

How do you roast butternut squash for soup?

Score the halved squash in a deep crosshatch, place it cut side up in a large roasting dish, and roast at 425°F with the other vegetables until completely soft. The halved squash needs 50 to 60 minutes, while peeled and cubed squash finishes in 30 to 35 minutes. Roast until a knife slides into the thickest part with no resistance, the garlic is golden and soft, and the tomatoes have burst.

Can I use canned coconut milk in butternut squash soup?

Yes, use 3/4 cup of canned full fat coconut milk, then shake the can well before opening because the solids and liquid separate. Carton coconut milk is mostly water and will not make the soup creamy. Blend the roasted vegetables with vegetable broth first, then stir in the coconut milk and warm gently for 3 to 4 minutes without hard boiling so it stays silky.

How long does roasted butternut squash soup last in the fridge, and can I freeze it?

Refrigerate the cooled soup in an airtight container and use it within 4 days. For longer storage, freeze it in portions without the toppings for up to 3 months. Thaw overnight in the refrigerator, then reheat gently and whisk while warming because the coconut milk can look separated.

Why is my butternut squash soup too thick or too thin?

If it is too thick, thin it with more vegetable broth a spoonful at a time, up to 1/2 cup extra. If it is too thin, simmer uncovered gently to reduce it. Taste after each adjustment and season again, since broth saltiness varies and the tray seasoning alone may not be enough.

3/4 cup canned full fat coconut milk, plus more to drizzle
1 tsp fresh ginger, grated, optional

To serve
chili oil or chili crisp
fresh parsley or cilantro, chopped

Instructions

Method
1-Prep the squash: Prep the squash. Preheat the oven to 425 F (220 C). Score the cut sides of the squash in a deep crosshatch and place the halves cut side up in a large roasting dish. Set an onion half, cut side down, into each seed cavity. Want it faster? Peel and cube the squash instead. The smaller you cut everything, the faster it roasts.
2-Load and season the tray: Load and season the tray. Add the bell pepper, carrots, garlic heads (cut side up) and cherry tomatoes around the squash. Drizzle everything with the olive oil, then sprinkle over the cumin, smoked paprika, thyme, rosemary, salt, pepper and chili flakes if using. Rub the seasoning into the squash flesh.
3-Roast for 50 to 60 minutes, until: Roast for 50 to 60 minutes, until a knife slides into the thickest part of the squash with no resistance, the garlic is golden and soft, and the tomatoes have burst. Cubed squash is done in 30 to 35 minutes. If the garlic is still pale, give it 5 to 10 more minutes on its own.
4-Blend: Blend. Let the tray cool for 5 minutes. Scoop the squash flesh out of the skin into a blender, discarding the skin. Squeeze the garlic cloves out of their papers and add them, along with the onion, pepper, carrots, tomatoes and all the juices from the dish. Add 1½ cups of the broth and the ginger if using. Blend until completely smooth, working in two batches if your blender is small.
5-Finish with coconut milk: Finish with coconut milk. Pour the soup into a large pot over medium heat. Stir in the coconut milk and warm through for 3 to 4 minutes. Add more broth until it is as thick or thin as you like it. Taste and adjust the salt.
6-Serve: Serve. Ladle into bowls and top with a swirl of chili oil, a drizzle of coconut milk and chopped herbs. Serve with toasted sourdough.
