๐Ÿฝ๏ธ Master the art of homemade mac and cheese with this foolproof recipe that creates a golden, bubbly crust and irresistibly gooey interior every time

  • Total Time: 40 minutes
  • Yield: 8-10 servings

Ingredients

– 1 lb (about 450 g) dried elbow pasta

– 1/2 cup (113 g) unsalted butter

– 1/2 cup (64 g) all-purpose flour

– 1 1/2 cups (355 ml) whole milk

– 2 1/2 cups (590 ml) half and half

– 4 cups (about 400 g) shredded medium cheddar cheese, divided

– 2 cups (about 200 g) shredded Gruyere cheese, divided

– 1/2 tablespoon salt

– 1/2 teaspoon black pepper

– 1/4 teaspoon smoked paprika

Instructions

1-Follow these steps to create a delicious creamy baked mac and cheese that’s sure to impress. Start by preheating your oven to 325ยฐF (163ยฐC) and greasing a 3-quart (9×13 inch) baking dish for even cooking. Cook the pasta in salted boiling water for 1 minute less than the package instructions to keep it al dente, then drain and toss with olive oil to avoid sticking.

2-Next, shred the cheeses and divide them into three portions: about 3 cups for the sauce, 1 1/2 cups for an inner layer, and 1 1/2 cups for topping. This ensures a gooey center and a crispy top. Melt the butter over medium heat, whisk in the flour until it resembles wet sand, and cook for about 1 minute while whisking constantly.

3-Gradually whisk in about 2 cups of half and half until smooth, then add the remaining half and half plus the whole milk, whisking until combined. Continue cooking over medium heat, whisking frequently, until the sauce thickens to the consistency of thinned condensed soup. Remove from heat and stir in the salt, pepper, smoked paprika, and 1 1/2 cups of cheese until melted, then add another 1 1/2 cups cheese for a smooth blend.

4-Mixing and Baking Mix the cooked pasta thoroughly with the cheese sauce to coat every piece. Pour half of the mixture into the prepared baking dish, sprinkle 1 1/2 cups of cheese on top, then add the remaining pasta mixture and top with the rest of the cheese. Bake for 15 minutes or until it’s bubbly and lightly golden. Let it cool slightly before serving to enjoy the best texture.

Notes

๐Ÿ Cook pasta slightly under al dente since it will continue cooking in the oven and absorb sauce
๐Ÿงˆ Use room temperature milk and half and half for a smoother, faster-thickening sauce
๐Ÿ”ช Shred your own cheese instead of buying pre-shredded for better melting and creamier texture
