๐Ÿ”๐ŸŒถ๏ธ Explosive bang bang chicken skewers with creamy spicy-sweet sauce โ€“ juicy crispy bites that steal the show at any gathering!
๐Ÿข 20-minute air-fryer/oven/grill versatility, high-protein crowd-pleaser perfect for apps, dinners, or game day feasts.

  • Total Time: 22 minutes
  • Yield: 16 skewers

Ingredients

– 2 pounds boneless skinless chicken breasts, cut into 1-inch cubes for the main protein

– 1 tablespoon extra virgin olive oil to help the seasonings stick and keep the chicken moist

– 1 teaspoon paprika for color and mild smoky flavor

– 1 teaspoon garlic powder for savory base flavor

– 1 teaspoon kosher salt to bring out natural flavor

– 1/2 teaspoon black pepper for bite and balance

– 1 1/4 cups mayonnaise for the creamy base

– 2/3 cup Thai sweet chili sauce for sweetness, tang, and heat

– 2 teaspoons Sriracha, adjusted to taste for spicy kick

– 2 tablespoons honey to smooth out the heat and add glossy finish

Instructions

1-First Step: Soak the skewers and prep the chicken Start by placing the wooden skewers in water for at least 30 minutes. This helps keep them from charring in the oven, air fryer, or grill. While they soak, cut 2 pounds of boneless skinless chicken breasts into 1-inch cubes. Pat the chicken dry with paper towels if needed. Dry chicken holds seasoning better and gives you better browning. If you want to get ahead, you can cube the chicken earlier in the day and keep it covered in the fridge until you are ready to season it.

2-Second Step: Season the chicken Place the chicken cubes in a large bowl. Add 1 tablespoon extra virgin olive oil, 1 teaspoon paprika, 1 teaspoon garlic powder, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper. Toss everything well so each piece gets coated. This seasoning mix is simple, but it gives the chicken a savory base that works beautifully with the bang bang sauce. If you like a little extra heat, you can add a pinch more paprika or a tiny shake of cayenne.

3-Third Step: Thread the chicken onto skewers Thread 4 to 5 chicken cubes per skewer, leaving a little space between pieces if possible. That helps the heat move around the chicken and cook it more evenly. Try to keep the pieces close in size so they finish at the same time. If you are cooking for kids or making this for a party, shorter skewers can make serving easier. If you do not have wooden skewers, metal skewers work too and do not need soaking.

4-Fourth Step: Mix the bang bang sauce In a small bowl, mix together 1 1/4 cups mayonnaise, 2/3 cup Thai sweet chili sauce, 2 teaspoons Sriracha, and 2 tablespoons honey. Stir until smooth and creamy. The sauce should taste sweet, spicy, and rich all at once. If you want more heat, add a little extra Sriracha. If you want a sweeter sauce, add a touch more honey. This sauce is also great on shrimp, roasted vegetables, or as a dip for fries.

5-Fifth Step: Brush and cook the skewers Brush about half of the sauce over the assembled skewers before cooking, then save the rest for later. This gives you extra flavor without burning the sugary, mayo-based sauce during cooking. Choose your cooking method below: – Air fryer: Cook at 400ยฐF for 11 to 12 minutes, flipping halfway through, until the chicken reaches 165ยฐF internally. – Oven: Preheat to 400ยฐF and bake on a lined sheet pan for 20 to 25 minutes, flipping halfway through. Brush with the reserved sauce after cooking. – Grill: Cook over medium-high heat for 8 to 10 minutes per side. Brush with sauce after cooking, not during, so the sugar does not burn.

6-Final Step: Finish and serve Once the chicken reaches 165ยฐF, brush the skewers with the remaining bang bang sauce. Serve them hot with rice, vegetables, salad, or noodles. A sprinkle of green onions or sesame seeds works well too, though the recipe is already flavorful on its own.

Notes

๐Ÿฅข Soak skewers 30+ minutes or use metal to avoid charring.
โฐ Assemble and sauce ahead; fridge 2-3 days or freeze 3 months.
๐Ÿ”ฅ Brush sauce post-cook only to prevent burning sugars.
