Why I Love Mediterranean Slow Cooker Recipes
I have always loved the Mediterranean diet, but busy weeknights used to get in the way. That changed when I discovered how perfectly slow cooker meals fit this way of eating. There is something almost magical about loading a crock pot with olive oil, fresh vegetables, lean proteins, and aromatic herbs in the morning, then coming home to a kitchen that smells like a seaside taverna. I use olive oil instead of butter, plenty of herbs and spices instead of heavy sauces, beans and lentils for fiber, and lean proteins like chicken and fish. These meals are naturally balanced, filling, and ideal for healthy eating or weight loss. They also freeze beautifully for meal prep. If you want to plan more protein packed meals, grab my free printable list of high protein foods to keep on your fridge.
Here are my go to Mediterranean crock pot staples:
- Extra virgin olive oil for drizzling
- Fresh tomatoes, onion, garlic, and bell peppers
- Eggplant, zucchini, and artichoke hearts
- Chickpeas, lentils, and cannellini beans
- Lean chicken breast or thighs, lamb, and turkey
- Herbs like oregano, basil, rosemary, and cumin
- Lemons, olives, and capers for brightness
One of my favorite tricks: season generously with herbs and spices rather than relying on salt. A squeeze of lemon juice or a splash of vinegar adds so much brightness without extra sodium. Most of these dishes freeze well for up to 3 months, so you can always have a healthy dinner ready.
