Ingredients

Chicken breast, cut into 1 inch cubes – 1.5 lbs (680g)

Fresh pineapple, cut into chunks – Enough for alternating on skewers

Red onion, cut into chunks – 1 medium (150g)

Honey – 1/4 cup (85g)

Sriracha sauce – 2 tbsp (30ml)

Olive oil – 2 tbsp (30ml)

Garlic, minced – 3 cloves

Smoked paprika – 1 tsp

Cayenne pepper – 1/2 tsp

Salt – 1 tsp

Black pepper – 1/2 tsp

Instructions

1-Prep the ingredients: Cut chicken into 1-inch cubes, pineapple and red onion into similar chunks, mince garlic, and soak wooden skewers in water for at least 30 minutes.

2-Make the marinade: Whisk together honey, sriracha, olive oil, minced garlic, smoked paprika, cayenne, salt, and black pepper until glossy.

3-Marinate the chicken: Toss chicken in marinade, cover, and refrigerate for at least 30 minutes, up to 2 hours (or overnight, but no more than 24 hours).

4-Assemble the skewers: Thread marinated chicken onto skewers, alternating with pineapple and red onion, leaving small gaps between pieces for even cooking.

5-Preheat the grill and cook: Heat grill to 400ยฐF (200ยฐC), then reduce to medium-high; grill skewers for 5-7 minutes per side until chicken reaches 165ยฐF (74ยฐC).

6-Serve immediately: Place skewers on a platter, drizzle with honey or serve with hot sauce, and pair with grilled corn or salads.
