Beef & Lentil Soup

Here is a different way to use ground beef that goes way beyond the usual tacos and pasta sauces. This beef and lentil soup takes a trusted lentil soup base and gives it a serious upgrade with browned beef and warm Moroccan inspired spices.

The result is a thick, hearty, healthy one pot dinner that covers meat, starch, and vegetables in a single bowl. It is economical, freezer friendly, and exactly the kind of meal I want waiting for me on a busy weeknight.

New beef mince recipe idea: Beef & Lentil Soup!

Ground beef is one of those ingredients I always have in my freezer, but I will admit I fall into the same rotation: tacos, pasta sauce, maybe meatballs if I am feeling ambitious. Here is a different beef mince recipe idea for you that completely changes the script. Soup!

What makes ground beef work so well here is that it is economical and incredibly convenient. No chopping or trimming. Just break it up and brown it.

But the real secret is browning the beef with spices. That way, the flavor gets right into the meat and seeps into the broth as it simmers. Lentil soups can sometimes be a little bland on their own, but the spiced beef changes everything.

I went with a Moroccan flavor profile for the base recipe because it pairs beautifully with lentils and tomatoes. But you can absolutely take this in other directions. Curry spices, Greek herbs, Italian seasoning, or a Mexican inspired blend all work with the same method. The soup stays the same, the personality changes.

What goes in Beef & Lentil Soup

One of the things I love most about this soup is how flexible it is. The ingredient list is really a guideline, and most components can be swapped based on what you have on hand. Let me walk you through everything that goes into the pot.

Moroccan Spice Mix

You will mix these together in a small bowl and use some for browning the beef and the rest for the broth:

  • 2 1/2 tbsp Moroccan spice mix (store bought)
  • 1 tsp allspice
  • 2 tsp cumin powder
  • 2 tsp paprika
  • 3/4 tsp black pepper
  • 1/2 tsp salt

Soup Ingredients

  • 1 tbsp olive oil
  • 2 garlic cloves, finely chopped
  • 1 onion, finely chopped (brown, white, or yellow)
  • 500g / 1 lb ground beef (lean recommended)
  • 1 1/4 cups dried lentils (or 2 cans, drained)
  • 2 carrots, cut into 1/3 inch dice
  • 2 celery stalks, chopped into 1/3 inch pieces
  • 2 zucchinis (small, or 1 large), cut into 1/3 inch dice
  • 100g / 4 oz green beans, trimmed and cut into 1/2 inch pieces
  • 800g / 28 oz crushed canned tomato
  • 4 cups / 1 litre beef stock, low sodium
  • 3 cups water

Serving

  • Plain or Greek yogurt
  • 1/4 cup coriander (cilantro) leaves, or sliced green onions

Now let me share some notes on the key ingredients and possible substitutions.

Ground beef: I use lean beef because it keeps things lighter, but honestly, a fattier cut gives more beef flavor. If you want to swap it out, ground pork, chicken, turkey, or lamb all work. Just keep in mind that whiter meats like chicken and turkey need a bit more spice to carry the same depth.

Lentils: Dried lentils are my first choice because they add flavor and naturally thicken the broth as they cook. If you are short on time, canned lentils, chickpeas, or beans also work. You will just lose some of that natural thickening power.

Onion and garlic: These are your essential flavor base. No substitutions here, they do the heavy lifting.

Crushed tomato: If you do not have crushed canned tomato, tomato passata works perfectly. You can also use a tomato paste substitute, just adjust the liquid accordingly.

Beef stock: Liquid stock is what I recommend over cubes or powder because it gives a cleaner, more honest flavor. If you only have bouillon cubes or powder, take your time and sauté the onion, celery, and carrots a little longer to build a proper soffrito base that compensates.

Spice approach: Start conservatively with the spices, taste as you go, and dial it up if you want more intensity. The written recipe is intentionally moderate so everyone at the table can enjoy it. If you are using a different spice blend, the same principle applies. Build the flavor gradually rather than dumping everything in at once.

Vegetables: You want 6 to 8 cups of vegetables that cook well in soup broth. The trick is timing. Add vegetables that can handle a full 25 minute simmer first, like carrots and celery.

Add greener or softer vegetables like beans and zucchini toward the end so they do not turn to mush. Dice everything small enough that each spoonful has a bit of everything. The vegetable selection is really a suggestion, not a rule.

Anything that holds up in broth will work. Try parsnips, potatoes, sweet potatoes, or even pumpkin in the harder category. For the quicker cooking additions, peas, spinach, or corn all make great additions. Just match the cooking time to the vegetable.

How to make Beef Lentil Soup

This is a one pot recipe, which means cleanup is minimal. Yessss. Here is how it comes together step by step.

  1. Mix the spices: Combine the Moroccan spice mix, allspice, cumin, paprika, black pepper, and salt in a small bowl. You will use some for the beef and the rest for the broth.
  2. Sauté onion and garlic: Heat olive oil in a large pot over medium high heat. Cook the onion and garlic for about 3 minutes until golden on the edges.
  3. Brown the beef: Turn the heat up to high, add the ground beef, and cook until it is no longer red, breaking it up as you go. Add 2 tablespoons of the spice mix and cook for another 2 minutes. Your kitchen will smell amazing.
  4. Add the hearty vegetables: Add the carrots and celery, then stir for 1 minute to coat them in the flavors.
  5. Make the broth: Add the water, beef stock, crushed tomato, dried lentils, and the remaining spice mix. Stir everything together, bring it to a simmer, then cover with a lid and reduce the heat to medium low for a gentle simmer.
  6. Simmer and add softer vegetables: Let it simmer for 15 minutes, then add the zucchini and green beans.
  7. Finish simmering: Continue simmering for another 10 minutes, or until the lentils are soft. That is 25 minutes total. Very old dried lentils might need up to 35 minutes.
  8. Serve: Taste and add more salt if needed. Ladle into bowls and top with a dollop of yogurt and fresh cilantro.

The broth thickens naturally from the starch in the lentils and the breakdown of the crushed tomatoes as they simmer. No flour or cornstarch needed.

The beauty of this method is that everything happens in one pot. You build layers of flavor as you go, from the spiced beef to the sautéed vegetables to the long simmer that lets the lentils and tomatoes do their thing.

By the time you are ready to serve, the broth is rich, thick, and deeply flavored without any extra effort.

A quick tip: if your dried lentils have been sitting in the pantry for a long time, they can take 5 to 10 minutes longer to soften. Just test one around the 25 minute mark and keep simmering if needed.
