Panko breadcrumbs
1/4 cup plus 1 tablespoon grated Parmesan cheese
Italian seasoning

1/2 cup shredded low-moisture mozzarella cheese

Instructions
1-Preheat and prep the chicken: Preheat air fryer to 400ยฐF, butterfly chicken breast into two thinner pieces, and pat completely dry.
2-Set up the breading station: Whisk eggs in one dish; combine panko, 1/4 cup grated Parmesan, Italian seasoning, salt, paprika, and pepper in another.
3-Coat the chicken: Dip chicken in egg, let excess drip, then press firmly into breadcrumb mixture, coating both sides evenly.
4-Arrange and spray: Spray air fryer basket with non-aerosol oil, place chicken in a single layer, and spray tops generously with oil.
5-Cook and flip: Air fry at 400ยฐF for 5 minutes, flip, cook 5 more minutes until internal temperature reaches 165ยฐF (add 1 minute per side if thicker).
6-Top with sauce and cheese: Spoon a couple of tablespoons of tomato sauce over each piece, top with shredded mozzarella and remaining Parmesan, then air fry 2 minutes until cheese melts.
7-Serve right away: Transfer to plates, serve with extra marinara for dipping or over pasta.
