1 cup unsweetened coconut milk (canned, full fat) or unsweetened almond milk

1/2 cup sugar free pineapple juice or syrup

1/4 cup rum (optional)

1 to 2 cups ice cubes

Sugar free sweetener to taste

1 teaspoon MCT oil or coconut oil

a pinch of salt

pineapple slices

maraschino cherries

wedge of fresh coconut

Instructions

1-Gather everything: Set out blender, measuring cup, and tall glass; chill glass in freezer for 10 minutes.

2-Blend the base: Add unsweetened coconut milk, sugar free pineapple juice or syrup, and optional rum to blender; blend on high 20-30 seconds until smooth and frothy.

3-Sweeten to taste: Add sugar free sweetener gradually, blending and tasting until desired sweetness is reached.

Notes

🥥 Use full-fat canned coconut milk, not the carton kind—it is thicker, creamier, and much lower in carbs.
🧊 Freeze coconut milk into ice cubes ahead of time to keep your drink extra thick and cold without watering it down.
🍍 Taste as you sweeten—every sugar-free sweetener brand has different potency, so add a little at a time.
