π§ Grate Parmesan from a wedge only β pre-shredded cheese contains anti-caking agents that make the sauce grainy.
π· Use a dry white wine like Pinot Grigio or Sauvignon Blanc; sweet wines like Moscato or Riesling will ruin the sauce flavor.
π§ Reserve pasta water before draining β the starchy water is essential for adjusting sauce consistency and helping it cling to every strand.
