4 boneless skinless chicken breasts
1 cup chicken broth
8 oz cream cheese, softened to room temperature
4 cloves garlic, minced
2 cups mixed vegetables
1 teaspoon Italian seasoning

Instructions
1-Sear the chicken (optional): Heat a skillet over medium-high heat, pat chicken dry, season with salt and pepper, and sear 2-3 minutes per side until golden.
2-Season the chicken: Place chicken in slow cooker and season with Italian seasoning, salt, pepper, and a pinch of smoked paprika if desired.
3-Add broth and garlic: Pour chicken broth around chicken, then add minced garlic.
4-Add cream cheese: Drop softened cream cheese in spoonfuls on top; do not stir.
5-Layer vegetables: Add sturdy vegetables (carrots, broccoli, bell peppers) on top; if using tender veggies like spinach or peas, add them during the last 20 minutes.
6-Cook: Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken internal temp reaches 165ยฐF.
7-Finish the sauce: During last 30 minutes, gently stir sauce; optionally whisk 1 tbsp cornstarch with 2 tbsp cold water to thicken, or add 1/4 cup grated Parmesan.
8-Serve: Serve hot over white rice, egg noodles, or crusty bread to soak up the creamy garlic chicken sauce.
