1 1/2 cups all purpose flour

1/2 cup sugar

1/2 cup unsalted butter, softened

1/4 teaspoon salt

1 cup chopped fresh rhubarb (from about 2 to 3 stalks)

1/2 cup cream cheese, softened to room temperature

1/2 cup sour cream

1/4 cup sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup rolled oats (old fashioned work best)

1/2 cup brown sugar, packed

2 tablespoons all purpose flour (to help bind the crumble)

Instructions

1-Make the crust: Mix 1 1/2 cups flour, 1/2 cup sugar, 1/2 cup softened butter and salt until coarse crumbs. Press firmly into a greased 9×9 pan. Bake at 350ยฐF for 10 minutes.

2-Mix the filling: Beat 1/2 cup cream cheese, 1/2 cup sour cream, 1/4 cup sugar, 1 egg and 1 tsp vanilla until smooth. Fold in 1 cup chopped rhubarb.

3-Add crumble topping: Combine 1/2 cup rolled oats, 1/2 cup brown sugar and 2 tbsp flour. Spread rhubarb cream cheese mixture over crust and sprinkle crumble evenly on top.

4-Bake the bars: Bake at 350ยฐF for 30-35 minutes, until the centre is set and the top is golden.

5-Cool and serve: Cool completely before slicing into 9 squares. Serve at room temperature or chilled, with whipped cream or powdered sugar if desired.
