3-Heat your risotto pot over medium heat: Heat your risotto pot over medium heat. Add the shallots and cook for 2 minutes, stirring frequently. If cooking without oil, add a splash of broth or water if the shallots begin to stick. Use your cooking utensil to spread the liquid around a little so nothing sticks.
