6-Heat the oil: Pour about 2 inches of neutral oil into a heavy pot or deep skillet and heat to 375°F (190°C) using a thermometer.
7-Fry in batches: Drop batter by rounded tablespoonfuls into the hot oil, fry 2–3 minutes per side until deep golden brown, avoiding overcrowding.
8-Drain and coat: Transfer fritters to a paper towel-lined plate or wire rack; while warm, roll in sugar or drizzle with glaze.
