Glow Up Immunity Carrot Salad

If you are looking for a salad that actually makes you excited to eat your vegetables, this is the one. The Glow Up Immunity Carrot Salad takes humble carrots and turns them into something bright, crunchy, and downright addictive.

I first made this on a weeknight when I needed something quick but satisfying, and it instantly became a regular in my rotation.

The secret is in the warm chili sesame oil dressing. By pouring hot oil over garlic, ginger, chili flakes, and sesame seeds, you bloom the spices and release a fragrance that fills your whole kitchen.

Toss that with ribboned carrots, cool cucumber, scallions, and cilantro, and you have a salad that works as a side dish or a light lunch on its own. Best of all, it comes together in just 20 minutes.

Crunchy, bright, slightly spicy, and incredibly addictive with ribboned carrots, cucumber, scallions, fresh cilantro, and a warm chili sesame oil dressing.

What makes this salad special is texture and contrast. The carrots are ribboned, not grated, so they keep a satisfying snap. Salting them first draws out excess moisture and tenderizes them just enough to soak up the dressing like a sponge. The cucumber adds a cool, crisp counterpoint, while scallions and cilantro bring freshness and bite.

Then comes the dressing. Toasted sesame oil is warmed gently until just hot, never smoking, and poured over a pile of honey, minced garlic, grated ginger, sesame seeds, and chili flakes. The oil blooms the aromatics, mellowing the garlic and intensifying the chili.

After a short rest, it gets poured over the salad and tossed by hand for even coating. The result is a bowl of carrots that you will genuinely crave by Tuesday.

This recipe serves 4 and takes about 20 minutes total: 15 minutes of prep and 5 minutes of cooking. Here is everything you need to make it at home.

Ingredients

IngredientQuantityPreparation
Carrots1 lbPeeled and ribboned
English cucumber1/2Thinly sliced into half moons
Scallions4Thinly sliced
Fresh cilantro1 large handfulRoughly chopped
Lemon1/2 largeJuiced
SaltTo taste
Toasted sesame oil5 tbsp
Honey1/2 tbspOr low sugar honey
Garlic cloves4Minced
Fresh ginger1 tbspGrated
Toasted sesame seeds1 1/2 tbsp
Chili flakes1/2 tsp

Instructions

  1. Add the 1 lb peeled and ribboned carrots to a large bowl with a couple generous pinches of salt. Toss and let sit for 10 to 15 minutes to slightly soften.

  2. Add the 1/2 sliced English cucumber, 4 sliced scallions, and a large handful of chopped cilantro to the carrots.

  3. Squeeze in the juice of 1/2 large lemon.

  4. In a heatproof bowl, combine 1/2 tbsp honey, 4 minced garlic cloves, 1 tbsp grated ginger, 1 1/2 tbsp toasted sesame seeds, and 1/2 tsp chili flakes.

  5. Warm 5 tbsp toasted sesame oil over low to medium heat until just hot but not smoking. Carefully pour the hot oil over the chili mixture. Let it bloom and cool for about 10 minutes.

  6. Pour the chili sesame oil over the salad and toss thoroughly. Hands work best for even coating. Taste and adjust with additional salt or lemon juice if needed.

Do not let the sesame oil smoke. If it starts to smoke, the spices will burn and turn bitter. Keep the heat low and pour the oil as soon as it feels hot to the touch.

A quick note on the salting step: it is not optional. Those 10 to 15 minutes of rest draw out moisture from the carrots, which keeps the salad from getting watery and helps the dressing cling to every ribbon.
