8 ounces halloumi cheese, cut into 2.5 cm (1-inch) chunks
1 cup cherry tomatoes, kept whole
1 medium red onion, cut into thick wedges
1 medium courgette, thinly sliced lengthwise into ribbons
4 tablespoons extra virgin olive oil
Juice of 1 lemon
3 garlic cloves, minced
2 tablespoons dried oregano
1 teaspoon dried thyme (optional)
1/2 teaspoon freshly ground black pepper
Pinch of salt (only if halloumi is not too briny)
Instructions
1-Soak the skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
2-Make the marinade: Whisk together olive oil, lemon juice, minced garlic, oregano, optional thyme, and black pepper; omit salt if halloumi is already salty.
3-Marinate the ingredients: Add halloumi, cherry tomatoes, red onion wedges, and courgette ribbons to the bowl, toss gently, and marinate for 15โ30 minutes (no longer).
4-Preheat the grill: Preheat grill, grill pan, or broiler to medium-high heat and lightly oil the grates or pan.
5-Thread the skewers: Thread ingredients onto skewers, alternating pieces and leaving small gaps for even cooking.
6-Grill the skewers: Grill for 8โ10 minutes, turning occasionally, until halloumi is golden brown with grill marks and vegetables are slightly charred.
7-Finish and serve: Transfer to a platter while hot, drizzle with extra lemon juice and fresh oregano, and serve immediately.
