Instructions

1-Combine chimichurri ingredients: In a small bowl, combine chopped parsley, minced garlic, oregano, red wine vinegar, lime juice, oil, red pepper flakes, salt, and pepper.

2-Stir chimichurri: Stir everything together until well blended.

3-Rest chimichurri: Let sit at room temperature for 10–15 minutes to meld flavors.

4-Season steak: Generously season skirt steak with salt and pepper on both sides.

5-Preheat grill: Preheat gas or charcoal grill to 500–600°F.

6-Grill steak: Place steak on hot grill; do not close lid or walk away.

7-Create grill marks: After 1 minute, rotate 90° for crosshatch marks; after another minute, flip and rotate again after 1 minute (total 4–5 min for medium rare).

8-Rest steak: Remove steak from grill and let rest 10 minutes under foil.

9-Slice steak: Slice steak against the grain at a slight angle.
