2 ears of corn, husked and halved

1 large red onion, cut into quarters from root to tip

2 medium zucchini, sliced lengthwise into 1/2 inch planks

1 bunch asparagus, trimmed

8 ounces mushrooms (cremini or button), stems trimmed

Olive oil spray or a high heat cooking spray

Salt and freshly ground black pepper

Optional: grated Parmesan cheese for serving

1/4 cup extra virgin olive oil

1/2 cup fresh parsley, finely chopped

2 tablespoons fresh lemon juice

1 clove garlic, minced

1/4 teaspoon salt

Instructions

1-Make the dressing: Whisk olive oil, parsley, lemon juice, garlic, and salt; set aside.

2-Preheat the grill: Heat grill to 425ยฐF; for charcoal, wait for white ash; for gas, preheat 10-15 minutes.

3-Prepare the vegetables: Spread vegetables on sheet pans, spray both sides with oil, and season with salt and pepper.

4-Grill the crisper vegetables first: Place peppers, corn, and onion on grates; cook about 4 minutes per side until charred and tender.

5-Add the softer vegetables: After flipping first batch, add zucchini, asparagus, mushrooms; cook 2-3 minutes per side.

6-Check for doneness: Vegetables should be crisp-tender with light char marks; avoid overcooking.

7-Finish and serve: Transfer to a platter, brush with dressing, sprinkle with Parmesan if desired; serve warm or at room temperature.
