Indian Pumpkin Curry (One Pot Recipe) This fragrant Indian pumpkin curry is creamy, cozy, and completely dairy free, and it comes together in one pot in about 25 minutes. You can start with fresh pumpkin purée or with a can from the pantry, so this dinner works just as well in October as it does in July.

1 medium onion, chopped
1 cup carrot, chopped
0.75 cup bell pepper, chopped
3 cloves garlic, minced
2 inch fresh ginger, minced
0.5 tablespoon curry powder
0.75 teaspoon ground turmeric
1 teaspoon ground cumin
0.75 teaspoon salt
0.5 teaspoon smoked paprika
0.25 teaspoon black pepper
0.5 cup passata
2 cups pumpkin puree
0.5 cup vegetable broth
0.75 cup coconut milk, canned
6 leaves fresh kale, chopped
Fresh herbs
Lime juice or lemon juice
Cooked rice

Instructions

1-Heat oil in a pan over medium: Heat oil in a pan over medium heat and sauté the onion, carrot, and bell pepper for about 4-5 minutes.
2-Stir in garlic and fresh ginger and: Stir in garlic and fresh ginger and sauté for a further 1 minute.
3-Add all spices, passata, pumpkin puree, vegetable: Add all spices, passata, pumpkin puree, vegetable broth, and coconut milk. Stir to combine.
4-Bring the mixture to a simmer: Bring the mixture to a simmer. Let simmer on low heat for about 5-8 minutes or until the veggies are tender.
5-Finally, add the kale and let simmer: Finally, add the kale and let simmer for a further 1-2 minutes, then turn off the heat.
6-Taste and adjust seasonings: Taste and adjust seasonings. Add more salt, pepper, and/or red pepper flakes (if you like it spicy), etc. to taste.
7-Serve with rice or naan bread: Serve with rice or naan bread. Enjoy warm!
