2 medium zucchini, approx. 400 g
150 g feta cheese, crumbled
1 egg
50 g breadcrumbs
2 tbsp oatmeal
2 tbsp freshly chopped parsley
1 garlic clove, finely chopped
1 tsp dried oregano
1 tsp salt
0.5 tsp pepper
2 tbsp olive oil

Instructions

1-Wash the zucchini thoroughly: Wash the zucchini thoroughly. Cut off the ends and coarsely grate them. Place the grated zucchini in a sieve and sprinkle with a little salt. Let sit for about 10 minutes, then squeeze well to remove as much water as possible.
2-Place the squeezed zucchini in a large: Place the squeezed zucchini in a large bowl. Add the crumbled feta, egg, breadcrumbs, optional oatmeal, finely chopped garlic, oregano, freshly chopped parsley, salt, and pepper. Mix thoroughly until homogeneous.
3-Form small balls about the size of: Form small balls about the size of a golf ball. Place them on a prepared baking sheet lined with parchment paper or lightly oiled, leaving space between them.
4-Drizzle the balls lightly with olive oil: Drizzle the balls lightly with olive oil. Preheat the oven to 200 ยฐC and bake for about 25 to 30 minutes, turning them halfway through for even browning.
5-Remove from the oven and let rest: Remove from the oven and let rest for a few minutes to preserve crispiness. Serve warm, possibly with a dip or salsa.
