Instructions

1-Cook the Pasta: Cook the Pasta: Begin by boiling a pot of salted water. Once it reaches a rolling boil, add the pasta and cook according to the package instructions. Stir occasionally to prevent sticking. When done, reserve some pasta water, drain, and set aside.
2-Spiralize the Zucchini: Spiralize the Zucchini: While the pasta is cooking, take your zucchini and spiralize it into noodles. If you do not have a spiralizer, you can also use a vegetable peeler to create thin ribbons.
3-Sauté the Garlic: Sauté the Garlic: In a large skillet, heat a drizzle of olive oil over medium heat. Once warmed, add minced garlic and stir for about 30 seconds until fragrant but not browned.
4-Cook the Zucchini: Cook the Zucchini: Add the spiralized zucchini to the skillet with the garlic. Sauté gently for about 3-4 minutes until it becomes just tender, stirring frequently to avoid overcooking.
5-Combine Pasta and Zucchini: Combine Pasta and Zucchini: Drain the pasta, making sure to reserve a bit of cooking water if needed. Add the pasta directly to the skillet with zucchini. Toss gently to combine, ensuring each noodle is coated in the flavored oil.
6-Season and Serve: Season and Serve: Squeeze fresh lemon juice over the mixture, then season with salt and pepper to taste. Toss everything well to combine. If the pasta feels dry, add a little reserved pasta water to loosen it up.
