Instructions

1-First Step: Heat the oven and prepare the pan. Start by preheating your oven to 350ยฐF. Line a 9ร—5-inch loaf pan with parchment paper so the bread lifts out easily after baking. This step saves time later and helps protect the loaf from sticking.

2-Second Step: Mix the dry ingredients. In a medium bowl, whisk together the flour, sugar, baking soda, cinnamon, salt, and pumpkin pie spice. Whisking now helps spread the leavening and spices evenly through the bread. Set the bowl aside while you work on the wet ingredients.

3-Third Step: Combine the wet ingredients. In a large bowl, add the shredded carrots, eggs, vegetable oil, milk, and vanilla extract. Stir until everything looks evenly combined. The carrots should be spread through the mixture so each slice gets good flavor and texture.

4-Fourth Step: Bring the batter together. Pour the dry mixture into the wet mixture and fold gently until just combined. Use a spatula and stop as soon as you no longer see dry flour.
