Ingredients
2 cups chopped fresh peaches (ripe but firm)
2 cups all purpose flour
3/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 large egg
1 cup milk (or buttermilk for extra moisture)
1/2 cup melted butter (or oil for longer lasting moistness)
1 teaspoon vanilla extract
Instructions
1-Preheat the oven and prep the pan: Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners or grease the cups.
2-Prepare the peaches: If desired, peel and chop peaches into 1/2 inch cubes to get 2 cups (peeling optional).
3-Combine dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
4-Combine wet ingredients: In a separate bowl, whisk egg, milk, melted butter, and vanilla until smooth.
5-Make the batter: Pour wet ingredients into dry ingredients and stir gently with a spatula just until combined (batter will be thick and slightly lumpy); do not overmix.
6-Add the peaches: Gently fold in the chopped peaches, and any optional nuts or dried fruit.
7-Fill the muffin cups: Divide the batter evenly among the muffin cups, filling each about two-thirds full.
8-Bake the muffins: Bake for 18 to 22 minutes at 350°F (or at 375°F, reducing time slightly) until tops are golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
9-Cool the muffins: Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

🍑 Use ripe but firm peaches so they hold their shape during baking.
🥄 Do not overmix the batter; stir just until dry ingredients are moistened to avoid dense, tough muffins.
🧈 Substitute buttermilk or add a couple tablespoons of plain yogurt for extra moist muffins.
