Instructions
1-Combine ingredients: Add frozen pineapple chunks, cream of coconut, pineapple juice, ice, and lime juice to a high-powered blender.
2-Blend until smooth: Blend on high until completely smooth and creamy; if too thick, add a splash of pineapple juice, if too thin, add more ice.
3-Adjust flavor: Taste and adjust sweetness or lime juice as desired.
4-Serve and garnish: Pour into two glasses and garnish with a pineapple wedge, maraschino cherry, and a cocktail umbrella if desired.
