Instructions
1-Make the marinade: Whisk soy sauce, brown sugar, garlic, ginger, oil, smoked paprika, and pepper until sugar dissolves.
2-Marinate the pork: Place pork cubes in a bag or dish, pour marinade over, and refrigerate overnight or at least 8 hours.
3-Prepare the produce: Cut pineapple, bell pepper, and red onion into 1-inch chunks; keep separate from raw meat.
4-Preheat the grill: Heat grill to medium-high (350-400Β°F) and oil the grates.
5-Thread the skewers: Drain pork from marinade, then alternately thread pork, pineapple, pepper, and onion onto skewers.
6-Mix the glaze: Stir together barbecue sauce and honey in a small bowl until combined.
7-Grill the skewers: Cook skewers 8-12 minutes, turning every 2-3 minutes for even charring.
8-Apply the glaze: Brush glaze on skewers during the last 2 minutes; let it set and caramelize.
9-Check doneness: Remove skewers when pork reaches 145Β°F internal temperature.
10-Rest and serve: Tent loosely with foil and rest 3-5 minutes before serving.
