1 medium zucchini

1 red bell pepper

1 yellow bell pepper

1 small red onion

2 tablespoons honey

3 cloves garlic, minced

1 tablespoon Dijon mustard

1 teaspoon dried oregano

2 tablespoons chopped fresh parsley

Instructions

1-Preheat the grill: Preheat gas grill to medium-high heat, about 400ยฐF, and let it fully heat.

2-Cut the ingredients: Cut pork tenderloin, zucchini, bell peppers, and onion into even 1-inch pieces.

3-Make the marinade: Whisk marinade ingredients in a large bowl until honey dissolves; reserve 1/3 in a separate small bowl for basting.

4-Marinate the pork: Toss pork cubes in the remaining 2/3 marinade, rubbing it into each piece.

5-Toss the vegetables: Add chopped vegetables to the same bowl and toss gently until glossy.

6-Assemble the skewers: Thread skewers, alternating pork, peppers, zucchini, and onion, leaving small gaps between pieces; do not pack tightly.

7-Add smoky flavor (optional): If desired, toss a handful of apple or hickory wood chips onto the grill just before adding skewers.

8-Grill first side: Place skewers on preheated grill, close lid, and cook for about 10 minutes until golden grill marks appear.
