1 ¼ pounds zucchini, chopped, 2 medium
1 tablespoon butter
1 tablespoon garlic, minced, 3 cloves
1 scallion, thinly sliced
1 teaspoon fresh lemon juice, or more to taste
¼ cup fresh grated parmesan cheese
salt
fresh ground black pepper

Instructions
