πŸ… Smoky grilled chicken topped with melted fresh mozzarella, ripe tomatoes, and fragrant basil, finished with a sweet-tangy balsamic drizzle.
πŸ— A restaurant-quality dinner that comes together in just 30 minutes with everyday ingredientsβ€”perfect for busy weeknights or casual entertaining.

  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

4 boneless, skinless chicken breasts, pounded to half inch thickness

2 tablespoons olive oil

1 1/2 teaspoons Italian seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

4 slices fresh mozzarella, BelGioioso is my favorite

4 tomato slices, cut into quarter inch thick rounds

3 tablespoons fresh basil, thinly sliced into ribbons

1/2 cup balsamic vinegar, Pompeian works great

1 1/2 tablespoons brown sugar

Instructions

1-Store leftovers: Keep chicken in an airtight container in the fridge for up to 3 days, with balsamic glaze stored separately to prevent sogginess.

2-Reheat leftovers: Warm in a 350Β°F oven for 10–15 minutes until heated through; microwave on medium power can be used as an alternative.

3-Make-ahead freezing: Grill chicken without cheese and tomato toppings, then freeze for up to 2 months by wrapping each piece in plastic and placing in a freezer bag.

4-Thaw and serve: Thaw frozen chicken overnight in the refrigerator, reheat, and add fresh mozzarella and toppings before serving.

Notes

πŸ”ͺ Pound chicken to an even 3/4-inch thickness so every piece cooks at the same rateβ€”skip this and you will have dry edges next to undercooked centers.
πŸ§€ Add the mozzarella only when the chicken hits 155Β°F to 160Β°F; adding it too early will cause the cheese to burn before the meat is done.
πŸ”₯ Watch the balsamic reduction closely during the last minuteβ€”it goes from perfectly syrupy to scorched in seconds and will continue thickening as it cools.
