2 tablespoons sour cream

1/4 cup chopped fresh cilantro

1/2 cup crumbled cotija cheese

1 lime (juice plus optional zest)

8 small flour or corn tortillas

1 jalapeño, thinly sliced (optional)

Instructions

1-Preheat the grill: Preheat grill to medium high, about 400°F (200°C).

2-Grill the corn: Place husked corn on grates; grill 10-12 minutes, turning occasionally, until charred and tender. Let cool slightly.

3-Make the elote mixture: Cut kernels off cobs; mix with mayonnaise, sour cream, cilantro, cotija cheese, lime juice and zest. Set aside.

4-Season and grill the steak: Season ribeye steaks generously with salt and pepper; grill 4-5 minutes per side for medium doneness.

5-Rest the steak: Transfer steaks to a cutting board; rest 5 minutes (essential, do not skip).

6-Toast the tortillas: While steak rests, grill tortillas about 1 minute per side until warm with light marks.

7-Slice the steak: Slice rested steak thinly against the grain, slices no thicker than a pencil.

8-Assemble the tacos: Place steak slices on tortillas, spoon elote mixture on top, add jalapeño if desired, and serve with lime wedges.
