  • Total Time: 100 min
  • Yield: 10 clusters 1x

Ingredients

Scale

1½ cups chopped strawberries and/or raspberries, chopped
1 cup plain low fat greek yogurt
1 tablespoon honey
1 teaspoon vanilla extract
Dash cinnamon
½ scoop vanilla protein powder
1¼ cup chocolate chips
1 tablespoon coconut oil

Instructions

1-In a large mixing bowl, stir together: In a large mixing bowl, stir together the Greek yogurt, honey, vanilla, cinnamon, and protein powder until smooth. Fold in the diced strawberries and raspberries.
2-Line a baking sheet with parchment paper: Line a baking sheet with parchment paper. Use a large spoon to scoop 10 yogurt clusters onto the parchment. Freeze for 1 hour until solid.
3-In a small bowl, melt the chocolate: In a small bowl, melt the chocolate chips and coconut oil together in the microwave. Stir every 30 seconds until melted. Add more coconut oil as needed to thin out the chocolate for dipping. Allow to cool slightly.
4-Dip the yogurt clusters into the chocolate: Dip the yogurt clusters into the chocolate and place back on the parchment lined baking sheet. Once dipped, freeze again for 10-20 minutes until the chocolate is set.
5-Enjoy immediately or place the clusters in: Enjoy immediately or place the clusters in an airtight container and store in the freezer. Let the clusters sit at room temperature for 15 minutes for optimal texture before eating.
