  • Total Time: 5 minutes
  • Yield: 1 drink 1x

Ingredients

Scale

1/3 cup (85g) Coco Lopez Cream of Coconut

2/3 cup (170ml) pineapple juice from concentrate

Ice

Pineapple wedge, for garnish

Maraschino cherry, for garnish

Instructions

1-Fill shaker with ice: For the shaker method, fill a cocktail shaker halfway with ice.

2-Add cream of coconut: Pour in 1/3 cup (about 85g) Coco Lopez cream of coconut.

3-Add pineapple juice: Add 2/3 cup (about 170ml) pineapple juice from concentrate.

4-Shake vigorously: Shake for 15–20 seconds until frothy and well combined.

5-Pour into glass: Pour the whole mix into a Poco Grande or hurricane glass filled with ice.

6-Add ingredients to blender: For the blender method, add 1/3 cup Coco Lopez and 2/3 cup pineapple juice to a blender.

7-Add frozen pineapple: Toss in 1/2 cup frozen pineapple chunks for extra thickness and sweetness.

8-Blend until smooth: Blend on high until completely smooth; if too thick, add a splash of pineapple juice or water.

9-Pour and serve: Pour into a chilled glass and serve immediately.

10-Garnish and present: Slide a fresh pineapple wedge onto the rim, drop in a maraschino cherry, and add a straw; serve in a hurricane glass.

Notes

🍍 Use frozen pineapple chunks instead of extra ice to keep the drink thick and creamy without diluting the flavor.
🍋 A small splash of fresh lime juice balances the sweetness and makes the drink taste brighter.
🧊 For a thicker frozen version, blend all ingredients with 1/2 cup frozen pineapple chunks on high until smooth instead of using the shaker method.
