Daily Recipe: June 21, 2025 Summer is here, and with it comes an abundance of fresh zucchini just begging to be roasted. This Zucchini Ratatouille Niçoise is my answer to a keto friendly, French inspired vegetable dish that feels both elegant and effortless.

Ingredients

2 large zucchini, sliced into thin rounds
1 each red and yellow bell peppers, julienned
15 cherry tomatoes, halved
4 garlic cloves, minced
a handful fresh basil, chopped
few fresh thyme sprigs, leaves picked
2 tablespoons olive oil
to taste salt
to taste freshly ground black pepper

Instructions

1-Preheat the oven to 200°C (392°F): Preheat the oven to 200°C (392°F).
2-Heat olive oil in a large skillet: Heat olive oil in a large skillet over medium heat. Add minced garlic and fry until golden.
3-Add halved cherry tomatoes to the skillet: Add halved cherry tomatoes to the skillet. Season with salt, pepper, and a pinch of fresh thyme. Cook for about 5 minutes, until tomatoes start to break down.
