🍪 Thick, chewy, and gooey chocolate chip cookies with crisp golden edges and soft centers that taste like they came straight from a professional bakery.
🍫 Uses simple pantry ingredients with clever tricks like an extra egg yolk and chilled dough for the perfect butterscotch flavor and beautiful bakery-style look.

  • Total Time: 42 minutes (plus chilling)
  • Yield: 24 cookies 1x

Ingredients

Scale

2 1/2 cups (318 g) all-purpose flour

1 teaspoon baking soda

1 teaspoon fine sea salt

1 cup (226 g) unsalted butter, at cool room temperature (67°F)

1 cup (200 g) dark brown sugar, packed

1/2 cup (100 g) granulated sugar

2 large eggs plus 1 egg yolk

2 teaspoons pure vanilla extract

2 cups (340 g) semisweet chocolate chips or chopped chocolate

Flaky sea salt, for sprinkling

Instructions

1-Whisk dry ingredients: Whisk flour, baking soda, and salt in a medium bowl; set aside.

2-Cream butter and sugars: Beat butter with dark brown and granulated sugars until light and fluffy, about 2–3 minutes.

3-Add eggs and vanilla: Beat in eggs one at a time, then add vanilla.

4-Mix in dry ingredients: Gradually add flour mixture on low speed just until no streaks remain; do not overmix.

5-Fold in chocolate: Fold in chocolate chips with a spatula, reserving some chunks to press on top before baking.

6-Chill dough: Cover and refrigerate at least 30 minutes (ideally 24–72 hours) to reduce spreading and deepen flavor.

7-Shape and bake: Scoop 1.5-tablespoon mounds onto parchment-lined sheet, space 2 inches apart; sprinkle with flaky salt. Bake at 375°F for 11–13 minutes until edges are golden and centers look slightly underdone.

8-Cool cookies: Let rest on baking sheet 5 minutes, then transfer to a wire rack to cool completely.

Notes

🧈 Use butter at a cool room temperature of 67°F — if the butter is too warm or oily, the cookies will spread flat in the oven.
⏰ Chill the dough for 24 to 72 hours for a deeper butterscotch taste and a thicker, chewier texture.
⚖️ Weigh your flour with a digital scale for accuracy — too much makes dry cookies, too little causes excessive spreading.
