2 large eggs

2 tablespoons milk

1 1/2 cups breadcrumbs (panko or Italian-style)

1 teaspoon dried basil

1 teaspoon garlic powder

1 teaspoon dried oregano

Vegetable oil, for frying (about 1/2 inch depth)

1 cup marinara or spaghetti sauce

8 ounces fresh mozzarella cheese, sliced or shredded

Instructions

1-Prepare the Breading Station: Set up a breading station with flour on a plate, an egg-milk wash in a shallow dish, and a mixture of breadcrumbs, Parmesan cheese, basil, garlic powder, and oregano in another dish.

2-Coat the Chicken: Dredge each piece of chicken in flour, dip in the egg mixture, then coat with the breadcrumb mixture, pressing gently so the breading sticks. Repeat for all pieces.

3-Fry the Chicken: Heat oil to 350ยฐF. Fry each breaded chicken breast one at a time for 2 minutes per side until golden brown, then transfer to a wire rack and tent loosely with foil while frying the remaining pieces.

4-Add the Sauce and Cheese: Top the fried chicken with spaghetti sauce and mozzarella cheese, then broil for about 3 minutes until the cheese is bubbly and very lightly browned, and the chicken reaches an internal temperature of 165ยฐF.
