Instructions

1-Mix dry ingredients: Whisk flour, salt, sugar, baking powder, and cinnamon together.

2-Mix wet ingredients: Beat eggs, then stir in milk and melted butter until combined.

3-Combine wet and dry: Add wet mixture to dry ingredients and stir just until flour disappears; do not overmix.

4-Fold in peaches: Gently fold diced fresh peaches into the batter until evenly distributed.

5-Heat oil: Pour about 2 inches of oil into a heavy saucepan or deep fryer and heat to 350–375°F, using a thermometer.

6-Portion batter: Drop batter by 1/4 to 1/2 cup portions into hot oil, working in batches to avoid overcrowding.

7-Fry fritters: Fry for 2–3 minutes, flipping once with long-handled tongs, until golden brown on both sides.

8-Drain: Remove fritters with tongs and drain on paper towels or a wire rack.

9-Make glaze: Whisk powdered sugar with about 2 tablespoons milk, adding milk slowly until drizzling consistency.

10-Glaze and serve: While fritters are warm, drizzle with glaze or coat in granulated sugar; serve immediately.
