1 bell pepper, cut into 1 inch pieces

1 red onion, cut into 1 inch pieces

1 zucchini, sliced into rounds

1 cup cherry tomatoes

1/4 cup olive oil

2 tbsp soy sauce

2 tbsp balsamic vinegar

2 cloves garlic, minced

Salt and pepper to taste

Wooden skewers (soaked in water for 30 minutes)

Instructions

1-Prepare and marinate steak: Pat steak dry; whisk olive oil, soy sauce, balsamic vinegar, garlic, salt, and pepper; add steak to coat and marinate in fridge at least 30 minutes, up to 4 hours.

2-Soak skewers: Soak wooden skewers in water at least 30 minutes to prevent burning.

3-Preheat grill: Preheat grill to medium-high heat, 400-450ยฐF.

4-Thread skewers: Thread marinated steak and vegetables alternately onto skewers, leaving small gaps for heat circulation.

5-Grill kabobs: Grill kabobs for 10-12 minutes, turning every 2-3 minutes, until steak reaches desired doneness (130-135ยฐF for medium-rare) and vegetables are tender.

6-Rest kabobs: Let kabobs rest for 5 minutes before serving to keep steak juicy.
