The chill time is important. The mixture looks soft right after blending, but it firms up into a spoonable mousse after time in the fridge.
The hands on prep time is about 5 minutes, and the total time is also about 5 minutes. After that, the refrigerator does the rest.
Fruit and Sweetener Swaps
Fresh strawberries are best when they are in season. If you use frozen strawberries, thaw them fully and pat them dry so the mousse is not watery. You can also change the fruit profile:
- 3 cherries replace the 5 medium strawberries
- 4 raspberries or blackberries replace the 5 medium strawberries
- 7 blueberries replace the 5 medium strawberries
If you use raspberries or blackberries, strain the puree to remove the seeds for a smoother texture. For a no refined sugar version, blend coconut sugar or date sugar into a fine powder.
For a keto version, a powdered monk fruit or allulose blend, erythritol, or powdered xylitol may work. I have not tried stevia here, and I think it could make the texture thinner.

Serving Ideas and Make Ahead Tips
This mousse is flexible enough to dress up or keep simple. Try layering it into parfait glasses with coconut whipped cream, diced strawberries, and sponge cake for strawberry shortcake parfaits. You can also pipe it into cups with a star tip and garnish with sliced strawberries, graham crackers, mini chocolate chips, or crushed Oreo cookie crumbs.
It also works as a filling for cupcakes or muffins, as a frosting for brownies, or as a topping on cakes, pies, tarts, or cheesecakes. For a make ahead dessert, spoon the mousse into airtight containers and refrigerate.
It will keep for up to four or five days. Freezing is possible, but the creamy texture may change and become less smooth.
