๐Ÿ๏ธ Tender, juicy chicken slow-cooked in a sweet pineapple soy glaze that tastes like a tropical vacation.
๐Ÿ A hands-off family dinner with just 15 minutes of prep โ€” perfect for busy weeknights and meal prep.

  • Total Time: 6 hours 30 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

2 pounds boneless, skinless chicken breasts

1 cup pineapple chunks (use canned in juice, not syrup, or fresh)

1/2 cup soy sauce (low sodium works great)

1/4 cup brown sugar

1/4 cup apple cider vinegar

1 tablespoon minced garlic

1 tablespoon grated fresh ginger

1/4 teaspoon red pepper flakes (optional, for heat)

1 tablespoon cornstarch

2 tablespoons cold water

Instructions

1-Prepare the chicken: Place the chicken breasts in an even layer at the bottom of your slow cooker.

2-Add pineapple: Scatter the pineapple chunks over the chicken.

3-Mix the sauce: Whisk together soy sauce, brown sugar, apple cider vinegar, minced garlic, grated ginger, and red pepper flakes until sugar dissolves.

4-Combine ingredients: Pour the sauce evenly over the chicken and pineapple in the crockpot.

5-Cook: Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours until chicken is tender and easily shreds.

6-Shred the chicken: Remove chicken, shred with two forks, and discard excess fat.

7-Thicken sauce: Stir cornstarch and cold water to make a slurry, then stir it into the sauce in the crockpot.

8-Final cooking: Cover and cook on high for an additional 10 to 15 minutes until the sauce thickens into a glaze.

9-Serve: Return shredded chicken to the crockpot, stir to coat, and serve over rice; garnish with green onions and sesame seeds if desired.

Notes

๐Ÿง„ Use fresh garlic and ginger for brighter, more vibrant flavor than powdered versions.
๐Ÿ Let the shredded chicken rest in the sauce for 10 minutes after cooking to absorb even more flavor.
๐Ÿ’ง Don’t add extra liquid to the slow cooker โ€” the chicken and pineapple release plenty of natural juices.
